Savoury around the world: a gourmet showcase

The global savoury grocery market is vast and structured around several product families: seasonings, dressings, oils, spices, canned goods, cereal products and pulses. Consumer preferences vary greatly depending on the region: in Asia, rice remains a staple food, with China and India leading the way as the world's largest consumers, while pasta dominates in countries such as Italy, Tunisia and Greece. The French savoury market

In 2024, France had more than 9,800 delicatessens, generating around €3 billion in turnover. The sector is highly diversified in terms of formats and positioning, ranging from small independent shops to big names such as La Grande Épicerie and Galeries Lafayette Le Gourmet. Faced with a downturn in activity since 2022, the sector has to deal with pressure from tourism, purchasing power and increased competition, particularly from food courts, local artisans and digital retailers.

In 2025, the French savoury grocery market will show moderate but sustained market growth, with sales of €19.8 billion, up 1.5% in value and 0.6% in volume. This growth is driven by dynamic categories such as seasonings, condiments, ready meals, soups and sauces, which are recording growth of over 3% in value. Savory snacks market size is also expanding, with aperitif products like, , aperitif cheeses and fresh olives, also continue to appeal to consumers.
